Novonesis' eXact® Quark Plus mesophilic cultures for production of quark or fromage blanc allowing to enchance productivity and get more out of your milk.
Product features, details and benefits
- Increased yield
Achieve a 1-3% yield increase with eXact® Quark Plus compared to standard mesophilic cultures. This is due to low proteolytic activity that results in less protein loss in the whey.
- Optimized acidification
Extend the optimal pH window for separation to at least 12 hours and reduce acidification time to 10 hours.
- Mild quark with superior texture
Create a mild mesophilic quark with no gas production, and unlock the possibility to reduce added sugar. eXact® Quark Plus also enables smooth, shiny, and less grainy texture compared to standard cultures.
This product contains microbials. While microbial products are safe to use in consumer applications, they must be handled correctly in production environments to ensure that workers do not inhale organic dust and bioaerosols.
Please follow the precautionary handling recommendations below:
- Avoid breathing dust/fume/gas/mist/vapors/spray
- Avoid contact with eyes, skin, or clothing
- In case of inadequate ventilation wear respiratory protection
- IF INHALED: Remove person to fresh air and keep comfortable for breathing
- Store in a dry place. Store in a closed container
- Dispose of contents/containers in accordance with local regulations
