- Superior pH stability
With stable pH throughout its shelf life, YoFlex® Acidifix® gives yogurts consistent high quality, and complements bioprotective cultures that extend shelf life.
- Cost reduction in a warm filling process
YoFlex® Acidifix® is the first culture that fits a warm filling process. Preserving the texture otherwise lost during the yogurt manufacturing process (i.e. through pumping and shearing) is the natural way to reduce the need for added texturizers or protein. Achieve the desired yogurt texture with a protein reduction of 0.3 - 0.6%, providing significant cost optimization potential.
- Mild base for your product innovation
This unique culture creates very a mild yogurt base that is better suited for diverse flavor options than regular, more acidic, yogurt bases.
The best way to reduce the level of texturizers and realize cost savings is by preserving the texture that is naturally built during fermentation. A method to obtain this is through a warm filling process – a gentle process where yogurt is kept at fermentation temperature until filling.
Until now it has been impossible to put this technology into practice, because no available culture had a stable enough pH to handle it; the yogurt would get too acidic.
With YoFlex® Acidifix® you can now use a warm fill process. Due to its unparalleled pH stability yogurt producers can both produce very mild yogurt bases while preserving texture naturally built from fermentation.
This product contains microbials. While microbial products are safe to use in consumer applications, they must be handled correctly in production environments to ensure that workers do not inhale organic dust and bioaerosols.
Please follow the precautionary handling recommendations below:
- Avoid breathing dust/fume/gas/mist/vapors/spray
- Avoid contact with eyes, skin, or clothing
- In case of inadequate ventilation wear respiratory protection
- IF INHALED: Remove person to fresh air and keep comfortable for breathing
- Store in a dry place. Store in a closed container
- Dispose of contents/containers in accordance with local regulations
